Ingredients
- 2 cups frozen corn kernels
- 1 can black beans, rinsed
- 2 medium tomatoes, chopped
- 1 garlic clove, minced
- 1 jalapeño pepper, seeded, deveined and chopped
- 1 tablespoon fresh lime juice
- 1/2 teaspoon salt
- 1/2 teaspoon ground cumin
- 1/8 teaspoon freshly ground black pepper
- 1 tablespoon chopped fresh cilantro
- Tortilla chips for accompaniment
Combine corn, black beans and remaining ingredients in medium non-metallic bowl, except for the fresh cilantro. Cover and refrigerate.
Bring to room temperature before serving and add the freshly chopped and cilantro.
Serve with tortilla chips
